Long time no blog. :)

Well, it has been some time since I've blogged! School started back (the break seems so short!) and these classes seem so harder, and require hours of reading. But I have read lots of good stories that I would have probably not chosen. For some of you that don't know, I am in LOVE with history and reading about times way before me. So, of course I would love the stories from that time era.

I have offically put in my notice at Catherines. It was a bittersweet thing. I loved my job at first, for the first year or so, and I have made some of the best friend's I'll ever have, but the company is just getting a little too ridcilious with thier high demands of goals to be met, lack of management (not in MY store, but others) and persistent rudeness the company as a whole reflects. Also, the fact that to me it seems like they can not keep thier minds straight about anything, and we spend more time fixing the mistakes they make than we do providing customer service and selling! Also, I got a full time job working from home, which is going to be so much fun!

I actually am taking my first PAID vacation this summer, which is amazing! 8 days of being on the beach with my sweet husband and family soaking up the sun! I have been to Florida one time in my life, and it was not the best time ever, but this time around I am super excited!! I have to thank my wonderful in laws for agreeing to let us come with them along the way. I have already bought all the stuff I will need to go, and we have saved back some money for our trip, we are so ready for a week of nothing but us! :)

Car shopping- yes, I am car shopping. We are looking for our first big purchase together. I will be making a signifigant amount of money at my new job, and we need a new car anyways. My old honda ( I paid 2k for it like 6 years ago has just about crapped out.) I tell everyone daily that if it crapped out today, I would have well gotten my money's worth. I will miss the gas mileage. It was AMAZING. But, I have narrowed down my options to a Nissan Altima, Ford Fusion, or a Pontiac Vibe. All three are safe cars, with decent gas mileage, and all will have a car payment less than 300 a month. I refuse to have a car payment more than a house note.. lol.

Anyways, life has been on the up and up here lately... I couldn't ask God for more... well maybe one more thing; a baby! I have the baby fever! I feel the time has come for Aaron and I to start a family. I see all these precious babies, and I can't help but want to be a mother. Aaron and I are stable in all aspects, with the exception of money, but that will soon change. You know, we would make great parents I believe. I have never been a partier, drinker, into drugs, etc. I have a level head, I dont deal with drama or anything. We made the commitment to get married at such a young age, and we have been together since we were 13 and 14 years old. We have a strong relationship, and they say when it's at it's strongest it's best to start a family, not when it's at it's worst. Anyways, we have decided we are going to wait until after the summer to start trying because I would like to loose more weight and really be on top of our finances as well. I will keep you all updated as I can. :)

Thanks for reading, and God bless each and every one of you! :) Night!

Homemade Stuffed Peppers

Welcome April, I come to you with open arms! Lots of changes this month! :)
Anyways, today was my downtime day so I made a good homemade meal, one of my Granny's recipes with a few of my own techniques. Enjoy!!

What you'll need:
5-6 Green Bell Peppers (Preferrably tall wide ones)
Tomato Sauce
Katchup
1 lb ground meat
1 cup rice cooked and fluffed
Mild Cheddar Shredded Cheese
Salt and Pepper
Olive Oil

1. Cut off tops of green peppers and clean out the inside seeds. DONT pull out the bottoms just pull the seeds out, the bottoms help keep the stuffing in.

2. Place peppers in a big pot of boiling water and salt (Use about 1/2 pan of water and put peppers in top up.) Cover to boil for about 5-10 minutes. You want them soft, but not mushy.

3. Drain water off the peppers, using tongs VERY gently remove peppers and place into a small baking dish or brownie pan with olive oil drizzled on the bottom. Sprinkle salt, pepper, garlic in the insides and rub gently on outsides as well. Set aside.

4. Cook rice according to box. After cooked and cooled a bit, add about 1/2 can of tomato sauce and about 1 cup of katchup. This is a personal preference on how you like it to taste. Also, sprinkle a bit of italian seasoning, garlic salt, pepper in as well.

5. Cook ground meat with onion until done, drain off excess grease and mix cooked meat with rice mixture. At this point I add more tomato product, a mixture of tomato sauce and katchup until it's the consistency I prefer.

6. Now, take a small spoon and spoon the mixture into each pepper very carefully. Fill them as full as you can without busting and all the way to the top, even a little over the top. Push down to fit more in to the pepper if need be.

7. Sprinkle tops of peppers with cheese, do this right before you put into the oven. (At this point you can wrap and freeze these for a later date, you can wrap up overnight for easier dinner prep as well.

8. Bake your peppers in a 350 degree oven for about 15 minutes until the cheese is melted and the peppers start to firm up again.

9. I served mine with fried potatoes, and Becky's brown sugar glazed carrots (which are delish!!). Enjoy. :) You can count on these being delicious and healthy, a great way for kids to eat veggies, and they are a pretty color too! :)

Thanks for reading all. Xoxo

Pasta Salad :)

Seems like my blog is more of recipes... hey I didn't get fat by not eating! ;)
Anyways, here's what you'll need:

1/2 box of macaroni noodles (you can use any kind of pasta you like)
Ranch Dressing (approx. 2 cups)
Small Can of Sliced black olives (drain very well in paper towel)
Bacon bits
1lb of grilled chicken
Ranch Seasoning packets
2 ribs of celery, diced finely
Salt and Pepper

1. Boil macaroni according to box.

2. Cubed and season chicken with ranch dressing packet, and cooking in pan with cooking spray until done.

3. Mix your dressing, celery, olives, bacon bits in the bottom of a medium sized bowl. (Use one with lid for easy access later, this makes enough for leftovers!)

4. Add your cooked noodles to the mix, and stir together.

5. Add grilled chicken to the top, and stir that in as well!

6. Let chill for about 15 minutes in the fridge and then enjoy with bread, or fresh celery. =)

**Note**
You can add anything you want into this salad to make it what you like. You can add sliced carrots, peas, scallions, green olives, chopped onion, green pepper, etc. I just used what I had in the cabinet. :P You can also use whatever dressing you like, I just prefer a creamy base dressing for a salad. You could technically use anything from miracle whip to catalina.

Buffalo Chicken Saturday! :)

So, it's another recipe!! I had to try this one since Aaron and I looove buffalo chicken. :)

What you need:
1 pound chicken (I used breasts and cubed up.)
1 can stewed tomatoes, or 1 can of diced tomatoes plain
2 cups white rice cooked (as per directions.)
Montery Jack Cheese
1/2 cup of buffalo sauce ( I used Red Hot's this time, but I'm having a special bottle of Wicker's coming from my father in law in Memphis for the next time!!)
Small Amount of Veggie/Canola Oil
Cajun Seasoning
Blue Cheese Dressing/Ranch Dressing (your preference)

1. Cube thawed chicken and cook in pan with oil until pink is gone, and edges get browned. I also added some seasoning in at this point as well to flavor the chicken.
2. Cook 2 cups of white rice according to your directions. (To make this really fast, buy the 5 minute quick cook rice.) After cooking and fluffing add some cajun seasoning to your rice. (I could eat this alone!) I used a plastic fork because I feel with metal it gives the rice a metal flavor- I know I'm weird but oh well!
3. Add your can of stewed tomatoes to your cooked cubed chicken! (I am going to used diced tomatoes next time because I did not like the big hunks of tomatoes in the dish. This is your preference.
4. Add your Buffalo Sauce, I used Red Hot's- but I really prefer Wicker's. I had Wicker's the first time down at my inlaws over the winter break and I lovvved it! But, here's the kind I substituted.
5. Put in a 11x13 pan, dark metal or glass- doesn't really matter. Sprinkle with your montery cheese. Bake for about 15 minutes on about 375 until the cheese is bubbly.
6. Let cool for a few minutes, add you some ranch or blue cheese on the top.... and ENJOY! We did!:)
 Have a good Sunday, yall.

Good News!

Hey guys!! I am feeling much, much better this evening! Things are turning around for me this week, even though it started terribly. I was sick with the stomach bug last sat-wednesday. It hung around FOREVER it seemed. And for those wondering, NO, I am not pregnant. I took tests, because my mom swore I was (she wants a grandbaby I believe...)lol. I was just down and out sick. But, I did find out that I got a fulltime job, with benefits! :) It's wonderful news to Aaron and I! I will be making really decent money, and will be able to take paid time off! Sooo exciting! I start in April, and I am going to stay at my second job because my boss begged me to stay so she could have good help in the store still. And hey, I still get my discount ;). It's no lie... I love clothes! Speaking of, Aaron and I are going to FL in July and I bought the CUTEST bathing suit!! It's a little swimdress, with zebra print on the top and black slimmer bottom part. It's so cute on, hides all the rolls. :) Anyways---   Jaina our puppy is growing up fast!! She's gotten the cutest little personality on her! I love her so much, but Lily is my sweet baby. For those who are pet owners, do you have problems with your pet when they are in heat? I'd like to know! Anyways, just wanted to write a short note to all your guys this evening. :) Love you all!
